Summer Wedding: Cake and Cupcakes

This is part 2 in a series:  The Cake and Cupcakes 

My sister got married last summer.  It was beyond beautiful!  The wedding was outside on an old family farm and there was even an old barn that really set the theme.  The weather cooperated and was just perfect.

I volunteered to do the wedding cake and cupcakes.  When I was in high school, my mom signed me up for a cake decorating class through our local parks and recreation.  I loved it.  I was the only kid in the class, but that never phased me one bit.  I learned a lot at that class.  I have made all my kids cakes, but nothing quite as important as a wedding cake.

We decided on a two tier cake for my sister and her husband and cupcakes for everyone else.  My sister loved the idea of cupcakes, and I thought it was much more manageable than a massive sized cake.  For me, anything larger than two tiers becomes more difficult.  Any little flaw is magnified with a bigger how in the world to move it from my house to the wedding venue.  Not something I was willing to contemplate.

Summer Wedding: Details

This is part 1 in a series:  Summer Wedding, The Details.

My sister got married last summer.  She had a beautiful outdoor wedding.  Luckily her wedding landed on a weekend between two major summer storms.  I'm talking trees down, power out for days and high winds and torrential rain!  Her wedding....perfect temperature, sunny skies, and just a light breeze.  Couldn't have been better.

 I have three sisters and two brothers.  We all came together to help with the wedding.  Many close friends and additional family also jumped in to help. This documents parts of the wedding.

Overnight Steel Cut Oats

I am a breakfast eater.  Everyday of the week.  We make time to savor breakfast on the weekends. On those days we usually make homemade pancakes or waffles.  Sometimes we will bake muffins, scones or biscuits.  Weekdays...well that's a whole other story.  It's grab what you can and eat it quick.  Overnight Steel Cut Oats are perfect for weekdays.  It just requires a small amount of planning the night before.  In the morning, it's ready!

Steel Cut Oats are hearty, delicious and good for you.  In my book, it doesn't get better than that!

My favorite toppings are blueberries, raspberries, pecans, and a touch of brown sugar.  Then I drizzle just a bit of milk (or cream if I'm feeling really decadent!) over the top.  Mmmmm-mmmmm-mmmmm!
